These are crispy and delicious onion rings, mozzarella sticks, and breaded zucchini all baked to perfection and served with a simple marinara sauce. I was so surprised at how close these came to the fried versions I love so much. I will definitely be making these again!

These shrimp make a great appetizer served with a baguette, but they could also be served over pasta as a main course. The garlic is cooked three different ways to get the most flavor, and the oil that the shrimp is cooked in becomes so buttery and light. We made it with sauteed spinach and cherry tomatoes, cooked in the same garlic oil. So good!
While watching Giadda on the food network last weekend (she made a dessert version of fresh rolls using mint, strawberries, and mangoes that looked delicious), it occurred to me that my favorite appetizer at our local Thai takeout spot might actually be something I could recreate at home.
