Roasted Root Vegetables

Roasting vegetables brings out a mild sweetness and fragrance that will fill your house with goodness. I used carrots, parsnips, and beets here, but you can add turnips, sweet potatoes, celery root, or any other kind of root vegetable you like! 

Ingredients
3 carrots, peeled and cut into 1 inch slices
3 parsnips, peeled and cut into 1 inch slices
3 beets, peeled and cut into 1 inch cubes
3 tablespoons olive oil
1 teaspoon seasoned salt

Directions
Preheat the oven to 400 while you prepare the vegetables. Add the cubed vegetables to a roasting pan, drizzle with olive oil and seasoned salt. Toss the vegetables until they are evenly coated and place in the oven for 30-40 minutes, turning once during baking.
