Roasted Cauliflower with Leeks, Raisins, and Pine Nuts
This is such a healthy and delicious cauliflower dish. The flavors and textures complement each other so well: the mild onion flavor of roasted leeks, the buttery flavor and crunchy texture of the roasted pine nuts, and the sweetness of the raisins.

Serves 4 as a side dish. Recipe adapted from Cooking with Shelburne Farms.
Ingredients
1 head cauliflower, cored and broken into bite size florets
3 tablespoons olive oil
1/2 teaspoon salt
1 medium leek, white and light green parts, halved and thinly sliced
1/2 cup pine nuts
1/2 cup raisins
Freshly ground black pepper
Directions
Preheat oven to 375 degrees. Toss the cauliflower, olive oil, and salt in a shallow roasting pan or rimmed cookie sheet and bake for 15 minutes. Take out the pan, add the leeks and stir to combine, and roast for another 10 minutes. Add the pine nuts and roast for another 10 minutes. Remove from the oven and stir in the raisins. Add the fresh ground pepper and a little more salt if needed, and serve.
